I made lembas bread! And it was so good!! (even though I could only have a bite of it 😉 just kidding). Tada!!
Here's the recipe if you guys want to try it:
1 generous cup of flour (almond flour works too)
1 cup of cornmeal
1 teaspoon of salt
2 teaspoons of baking powder
1 tablespoon of fine sugar
3 tablespoons of grated parmesian cheese
Handfull of fresh parsley leaves, chopped
1 red chili pepper, deseeded and finely chopped (we skipped this one)
3 tablespoons of olive oil
2 eggs, beaten
1/2 pint of buttermilk
And also, the recipe for Beorn's Honey Cakes for those of you who wanted it:
1 cup of all purpose or almond flour
1 teaspoon of baking powder
1/4 teaspoon of baking soda
1/2 cup and 2 tablespoons of melted butter
Generous 1/3 cup of light brown sugar
2 eggs, beaten
2 small, very ripe bananas, mashed
4 tablespoons of honey, plus as much as you'd like drizzled on top
Alas, when you lack a couple of ingredients 🥲
How similar is it to Lembas? Is it hearty?
