Since a few of ya'll were wondering about my mom's sugar free marshmellow recipe, here it is! :) She created it herself. It may take some experimenting to figure out how sweet you want it, but this is the way she makes it for our family.

Anna J's Mom's Sugar Free Marshmellow Recipe
1/3 cup water
2 tablespoons of beef gelatin
½ cup of water
¾ cup of sweetener of choice (I like to use ½ cup of allulose and ¼ cup of erythritol and monk fruit combination)
1 tsp. of vanilla
A pinch of salt
In mixer – add 1/3 cup of water and 2 Tablespoons beef gelatin to bloom
On stovetop in a small pot – add ½ cup of water and your choice mixture of sugar. Heat on medium heat until candy thermometer reads 210 degrees. Once it reaches 210 degrees, pour heated sugar and water mixture onto gelatin, and begin mixing, gradually, until reaching highest setting on mixer. Set a timer for 12 minutes and watch… About 5 minutes into it, add a pinch of Himalayan salt and 1 tsp. of vanilla. While the mixer continues to beat the marshmellow, get a piece of parchment paper and cover it with a thin layer of arrowroot to keep the marshmallow from sticking. When the timer goes off, quickly spoon the marshmallow mixture into a 9x9 dish and cover with a small piece of parchment to seal it, then cover it with plastic wrap or a lid. It sets up within an hour.
